Thai Chicken Pizza

Honestly, this recipe was such a nice surprise.  The other night I was combing through my blog roll, when I came across the recipe for this delicious looking pizza.  The thing that made me pause my scrolling was that the recipe called of peanut butter as the sauce rather than the traditional technique of using tomato sauce.

At first, I was a little skeptical as I’m one of those people who adhere to the “if it ain’t broke, don’t fix it” philosophy, but recently I’ve had some success making other dishes that use peanut butter as the foundation for sauces.  After looking in my cupboard and realizing that I had all the ingredients on hand, I took it as a sign from the Foodie Gods and made this recipe.

And boy did I like it.

Straight from the oven this pizza is one of the most delicious things I have made in a long time.  The creaminess of the  peanut butter and the crunch of the red pepper and the onion made for a perfect dinner time combo.  The recipe was easy to follow, and was pretty flexible which I enjoyed.

For the pizza dough, I used the same recipe as my previous encounter with home-made pizza, while the recipe for the pizza sauce came from blog Stephanie Cooks. I’ve been following her blog for a while and realized that we read/source a lot of mutual blogs most notably Annie Eats whose pie shell recipe I’ve used a few times.  The only adjustment that I’ve made to the recipe is that I used cheddar cheese instead of mozzarella because that’s what I had on hand.

All in all a great recipe, and I will definitely make it again!

Recipe Below

  • 1/4 cup Peanut Butter (I used crunchy)
  • 3 T water
  • 2 t soy sauce
  • 2 t rice vinegar
  • 1/2 t ground ginger
  • 1 clove garlic, minced
  • 1 t vegetable oil
  • 1 large chicken breast, diced
  • 1 red pepper, diced
  • 1 red onion, diced
  • Cheddar cheese, shredded
  1. Preheat oven to 400 degrees
  2. Prep pizza dough according to recipe
  3. Meanwhile whisk peanut butter, water, soy sauce, vinegar, ginger and garlic until well combined
  4. In a medium sized frying pan, heat oil and cook chicken until no longer pink
  5. Add red pepper, red onion and 1 T of sauce and toss to combine
  6. Use remain sauce as a replacement of tomato sauce, and then top with chicken, vegetables and cheese.
  7. Bake for 15 minutes or until crust is golden brown
