The Ultimate Chocolate Chip Cookie

Most people say that their chocolate chip cookies are the best. Whether it;s their grandmother’s recipe passed down on a well used index card or a recipe nabbed from the Internet, generally people are confident that their cookies reign supreme.  To those people I say, “you clearly haven’t tried my cookies yet.”

While not trying to sound too cocky, I will gladly boast that my chocolate chip cookies are the best in town.  My fascination with the dessert began when I still lived at home.  My father was a cookie making machine. You could always tell when Dad made his cookies because they were perfect.  Soft and chewy, his cookies were always a treat for a mid-day or a midnight snack.  Over the years, I’ve picked up a few tricks from my Dad as well as learned a few of my own.

I finally perfected chocolate chip cookies a few summers ago when I lived with my sister and our friend Allison. Each week our household went through 8 dozen cookies.  This also meant we were baking eight dozen a week. By the end of the summer, we had turned the art of cookie baking into a science.  Some of the tricks we learned:

  • Keep the oven cooler – a hot oven leads to crispy cookies
  • Pull em out early – Eight minutes is plenty of time to make a delicious cookie
  • A little extra flour never hurt – to avoid cookies that look like pancakes add a couple of extra tablespoons of flour
  • Do everything by hand – for some reason these cookies always turn out better when mixed by hand.

Recipe Below

  • 1 Cup butter – softened to room temperature
  • 1 cup brown sugar – packed (and I mean packed!)
  • 1/2 cup white sugar
  • 2 eggs – room temperature
  • 1 1/2 t vanilla
  • 2 heaping cups flour
  • 1 t Baking Soda
  • 1/2 t salt
  • 2 cups chocolate chips
  1. Preheat oven to 325
  2. Cream butter and sugars together in a large bowl
  3. Stir in eggs and vanilla and mix until combined well
  4. Add in flour, salt and baking soda and mix until combined
  5. Stir in Chocolate chips
  6. Take large tablespoon servings of the dough and roll into balls
  7. Place on baking sheet covered in parchment paper
  8. Bake for 8 minutes, rotating sheet once. (They may look underdone but trust me they are perfect)
  9. Remove from oven and let sit on tray for a few minutes
  10. Transfer to cooling rack and enjoy
